This week, the gals in my 1-week free Crockpot group and I have been Crockin’ our way through the week! They have been loving the recipes and even better, they love having dinner ready in a flash when they walk through the door.
There really is something magical about a super good crockpot meal.
It’s almost like someone surprised you and made you dinner, isn’t it? You walk through the door, the house has the aroma of a good home cooked meal and in just a few minutes, dinner is on the table! The fact that you prepped it and set it to cook this morning is a long-forgotten moment in time, right?
To get ready for this group, I tried out a dozen meals in search of 5 fabulous ones I could share with the gals in my Free Low Carb Crockpot Meal and Step Challenge 1-week group. Yep, I said low-carb. See, If I’m going to suggest it to them, it’s gotta fit in with how I’m eating to stay healthy too, ya know?
I shared all 5 recipes with the group members and a grocery list plus prepping tips. But today, I’m sharing my favorite one out of the 5 recipes with you!
Now, not everyone loves a Crockpot meal and my hubby is one of those guys. I am always on the lookout for something that I can make in the crockpot that he will like. NOT and easy task, my friends. But folks, this recipe is a winner! Seriously! Jeff even asked me to make it again! WHAT?? I’ve searched tons of great low-carb sites to find the best and this one is it!
Crockpot Ranch Chicken from The Fit Housewife
This recipe is ridiculously simple and SO very tasty! I could have it every week! If you wanted to save time the night of the meal, you could cook the spaghetti squash the night before. Spaghetti squash noodles will stay good in the fridge 4-5 days.
- 2 lbs boneless, skinless chicken thighs
- 3 Tbsp butter, cubed
- 4 oz. cream cheese, cubed
- 3 Tbsp ranch seasoning (I use Flavor God)
- Place chicken in crockpot.
- Place butter and cream cheese cubes on top of chicken.
- Sprinkle with ranch seasoning.
- Cook on low for 6 – 7 hours, or on high for 3 – 4 hours.
- Shred chicken and mix before serving.
Serve over Spaghetti squash noodles or Zoodles (or if you prefer a higher carb option, regular noodles).
To make spaghetti squash:
Cut a spaghetti squash in half lengthwise and scoop out the seeds. Brush with olive oil or butter (ghee if you have it) and salt and pepper. Cover with foil and cook at 350 for 30 minutes. Uncover and cook another 30 minutes. Let cool and then use a fork to scrape out the noodles!
